About the producer:
From its humble beginnings in Los Angeles in 1980, Huy Fong Foods has become one of the leaders in the Asian hot sauce market. The company's founder, David Tran made and marketed sauces in his native country of Vietnam before he arrived in the United States. At first, all sauces were produced by hand, but as popularity grew this becamse impossible. The company has continued to increase production every year, but is still never able to keep up with demand. Huy Fong Foods chili sauces are now widely appreciated for their flavor and versatility. Tamarind Concentrate by ChefShop.com
Tamarind concentrate provides a fruity, sour flavor with just a hint of sweetness. Tamarind possesses a more complex flavor than citrus juices and most Asian vinegars, and it does not have the harshness of the latter.

More about Tamarind
Tamarind is one of the primary "sour" flavorings in many Southeast Asian cuisines. It is the fruit of the leguminous tamarind tree. While tamarind pods are available in many markets, the most readily available forms are blocks of tamarind paste and containers of tamarind concentrate. Because the blocks contain seeds, chunks are usually cut off and soaked in warm water. The seeds are removed, and then the juice and pulp are used, but this can be time consuming and messy, and Tamarind concentrate the most convenient option.
